So whats for Easter breakfast, brunch or dinner? In the photo above are ham rolls, ham deliciously wrapping cream cheese and vegetables.
Some of my favorite dishes are indeed ham, green beans, supreme deviled eggs, a layer salad, perhaps a ham ball and crackers, easy 7-Up biscuits, sausage and cheddar meatballs, croissant bread pudding and fresh fruit!
If your not in the mood or a whole ham, what about ham salad? I LOVE IT! You can have it on crackers, bread, in a lettuce cup, or in a spoon.

Recipe for Ham Salad:
3 cups chopped ham ½ cup mayo or greek yogurt (add as much necessary to desired consistency) ¼ cup sweet or dill pickle relish 1 tsp brown mustard if desired 1 Tbl finely chopped onion or green onion (opt) black pepper to taste
***Some like to add cream cheese if eating as a cracker spread.

Recipe for Ham Ball:
1 and 1/2 pkgs cream cheese - softened 1 cup diced ham, I buy the already small diced ham in the fresh meat or deli meats section
1/2 can drained crushed pineapple 3-5 sliced green onions, depending on taste
1/2 C Miricle Whip
1/2 tsp worcestershire
1/4 tsp tabasco 1.5 tsp garlic powder 6oz ounces toasted chopped pecans or almond slivers
Blend altogether except for nuts. Form into a ball, refrigerate at least 2 hours to overnight. Remove from fridge and roll in nuts. Serve with crackers, carrot disks and or celery sticks.

Recipe for Deviled Eggs, Supreme:
12 eggs boiled and peeled
1/4 to 1/2 C mayo (start with less, add more if needed)
1 tsp mustard
1 TBL sweet pickle relish
1 TBL or more of minced/chopped olives
1 small green onion or chives chopped
Salt & Pepper to taste
*Can garnish with bacon, chives, sliced olives or paprika
Halve 12 eggs lengthwise, remove yokes with a small spoon into a bowl. Set egg whites into an egg dish/plate. Mash egg yolks into a bowl, adding all other ingredients. Place egg yolk mixture into a sandwich or piping bag, snip off the corner and fill egg whites. Place in fridge to chill.

Recipe for 10-Layer Salad
1 head lettuce 2 separate layers (can use spinach and romaine, your choice)
1 box frozen peas
1 C diced celery
1/2 cup purple onion, diced or cut into thin rings (rings are easier to pick out for onion haters!)
1lb bacon, fried crispy
1/4 green onion chopped or sliced into rings
Sliced mushrooms
4 hard boiled eggs, sliced into salad
1 and 1/2 cup may mixed with 2Tbl sugar, salt and pepper to taste
1 C shredded cheese
Other vegetables optional or switch them out!
Layer as written with the first ingredient on the bottom. Layer lettuce in salad twice and best to make the night before so flavors of of all ingredients absorb throughout. Very nice layering into a glass bowl.

Recipe for Sodapop Biscuits!
2 cups Bisquick
1/2 cup 7-Up
1/2 cup sour cream
1/4 cup butter, melted
Combine sour cream and biscuit mix. Add 7-Up, sprinkle additional flour on a board or table and roll dough out. FIRST, melt 1/4 cup butter and pour into a 9 inch square pan, place dough into pan, cut into squares.
Bake at 450 °F until golden brown for about 15 minutes
