Lasagna WonTon Cups

Recipe
• About a pound of ground beef, sausage, turkey or a mixture of all • 36 Wonton wraps • 1 C Cottage cheese or ricotta • 1 egg • 1/3 Parmesan cheese • Mozzarella Cheese • 2 C Tomato Sauce or premade pasta sauce • Italian seasoning mix into 2 cups tomato sauce. You can substitute paste, adding a little water to it. Preparation: Brown meat in a pan until done (can add fresh garlic and onion if desired), season with salt, pepper, garlic and onion powder. Next blend 1 c cottage cheese with 1 egg and 1/3 cup parmesan cheese, pinch of salt and pepper. Spray a standard sized muffin tin (12 muffins) with non-stick spray. Line tins with 2 won ton wraps, opposing directions, making a star shape. Spoon a 1 tbl spoon of sauce inside each tin, then the same amount of meat into each, next layer with a tbl of cottage cheese blend, another wonton wrap, sauce, meat, and mozzarella cheese; shredded or sliced from a roll/ball. After all tins are full, spray a large piece of foil with non-stick spray, use to cover muffin tins and bake at 350 for 20 minutes covered, then an additional 10-15 minutes uncovered. You can add spinach if desired. Cups weigh about 2.5-2.8oz each.
