What is Seitan?

Seitan is a wheat gluten, also called wheat meat, gluten meat, or simply gluten, is a food made from gluten, the main protein of wheat. It is made by washing wheat flour dough with water until all the starch granules have been removed, leaving the sticky insoluble gluten as an elastic mass which is then cooked before being eaten.
Seitan is made from wheat, it is low in carbs and high in protein. A 3-ounce portion of seitan contains 2.5 to 4 grams of carbs, 1 to 2 grams of fiber, 0 to 2 grams of fat and 21 grams of protein.
You can purchase Seitan in a variety of flavors, and textures; crumbles, strips, cubed and ground, also chicken style, or you can make your own. Seitan takes on the flavors it's cooked with, similar to tofu.

BBQ Seitan
1 small onion, julienne
1 green pepper, julienne
1 red pepper, julienne
Oil (enough to sautée with)
1 lb WestSoy Seitan Strips – cut into small strips ( or shred style)
1 bottle favorite Barbeque sauce
Sautee onions, green and red bell peppers in oil. Set aside. Cut seitan to mimic shredded pork. Add BBQ sauce to the seitan to taste and sautee in frying pan till edges brown (5 minutes). Toast sesame seed buns and add seitan and generous portion of onions and peppers or serve in strips with a side salad.
